{recipe} asparagus and arugula pasta salad

This is a recipe I got from a co-worker several years ago, and it is so great for a light, bright summer meal.  The roasted lemons give it a nice depth of flavor, and I really like the addition of the peppery arugula.  I eat it as is, but my meat eating husband adds chicken.

The Recipe:

¼ cup olive oil

4 cloves garlic, crushed

2 lemons, washed, with the rind zested and reserved

Salt and pepper to taste

2 bunches of asparagus, washed and trimmed

1 lb. dried penne pasta (I use whole wheat)

1 bottle of capers, drained and rinsed (I am not a huge caper fan, so I use half a bottle)

Approximately half a large (7 oz.) bag of baby arugula.

Preheat oven to 450.  Put salted water on to boil for the pasta.  While water is heating, mix the olive oil, garlic, lemon zest, and salt and pepper.  Cut the zested lemons into 8 wedges each.  Toss the asparagus and the lemons in the olive oil mixture, and put on a rimmed baking sheet.  Roast for 10-12 minutes, stirring once or twice, until the asparagus is roasted and the lemons are beginning to brown.  Cool.  Cook the pasta, then drain and rinse with cold water.  Put the pasta in a serving bowl with the capers.  Squeeze the juice from the roasted lemons over the pasta, then discard.  Cut the asparagus into pieces and mix into the pasta.  Scrape the oil mixture from the roasting pan into the pasta as well.  Add salt and pepper to taste.  If needed, add more lemon juice or olive oil.  Toss in the arugula just before serving at room temperature.

I really love this Discovered Lace Dress.  It’d be so pretty with nude pumps and a headband.

These Purple Unfolding Booties would be so great this fall paired with tweed and denim.  PERFECT.

This Manor Gates Dress is gorgeous.  The embroidered waistband and beaded neckline are so special.  This would be great now, and with tights and a cardigan when the weather turns cooler.

{wear} blush ruffles

My sister bought these great Kelsi Dagger Monaco sandals in the wrong size, but never returned them, and so, gave to me over the weekend. (Thank you, Katie!).  I wore them for her graduation party with white shorts and a coral Tory tunic.  Today, I am wearing them to work with a white skirt, black top, and tan jacket.

The shoes reminded me of these other awesome blush ruffle sandals that are a bit dressier – the Randee by Badgley Mischka.

 

I love both of these paired with black, white, and gold.

{wear} nude heels

A definite wardrobe must.  They go with everything and make your legs look super long.  My favorites have a platform for even more height, and a rounded toe for an elegant look.

{couture} more resort 2011

Erin Fetherston’s Resort Collection was so lovely and feminine.  Loved the bows, hats, skinny pants, adorable little dresses, and super high platforms.

Peter Copping’s Resort Collection for Nina Ricci was fabulous.  Beautiful pinks and neutrals in soft fabrics with sky-high wedges.  Loved it.

{eat} ladurée macarons

One of our Trustees at the Museum where I work was recently in Paris, and brought us back some heavenly Ladurée macarons.  I’d never had them before and I was not disappointed.  They are almost too beautiful to eat.

I’ve tried to make macarons several times with mixed results.  I think I’m a pretty good baker, but those things are really difficult to get right!  These french lovelies have inspired me to try again, though.
